Monk Snack Belgian Pale Ale

We made Monk Snack as a nod to the beers made by Trappist Monks for personal consumption within the monastery walls. Contrary to the beers made for market, these beers are pale, low-alcohol, and brewed with a healthy amount of hops. This beer is brewed with a blend of European malt and hops, and fermented with one of our favorite Belgian yeast. To compliment, we dry-hopped this beer with a touch of Nelson Sauvin and Motueka to give it a fruity complexity.

Horchata Matata Blonde Ale

It means “No worries, for the rest of your days”. Brewed with malted barley and toasted rice, this is a savory, sessionable blonde inspired by the Mexican rice and almond milk drink. A generous amount of lactose was added to the boil to give the impression of creaminess, with just enough hops to balance. After fermentation, it was conditioned on vanilla beans and cinnamon bark, to impart the traditional horchata flavorings and overlay unique layers on the quenching base beer.

This Saison is packed with flavor, while remaining supremely sessionable. A blended Saison yeast culture provides notes of citrus,spice, and subtle melon character with a dry finish. This beer was brewed with North Carolina and Georgia grown Pilsner, Pale, Malted Oat, and Wheat. We hopped this beer extensively with Mandarina Bavaria for an added citrus/herbal kick. Enjoy! We are excited to present you our newest lager beer. This is a beer that classic style that tests a brewery’s process and acumen.
